Valentine's Day Sugar Cookie Recipe

** Note: This recipe is not meant to roll out and cut cookies. These are a basic round sugar cookie and will not hold their shape well when baking.

Ingredients:

*Yields approximately 24 cookies

1 cup (2 sticks) salted butter at room temperature

1 cup granulated sugar

1/4 cup packed brown sugar

1 egg

2 tsp vanilla extract

1 tsp baking soda

1/2 tsp baking powder

2-3/4 cup all purpose flour

Red or pink sanding sugar for rolling


Instructions:

Preheat oven to 350 degrees Fahrenheit

  • Cream together butter, granulated sugar, and brown sugar.

  • Add egg and vanilla then mix.

  • Add baking soda and baking powder then mix.

  • Add flour - mix on low speed until just incorporated then increase to medium speed for 1 minute.

  • Place sanding sugar in a small bowl.

  • Scoop a heaping tablespoon of dough and roll into a ball.

  • Roll ball of dough in sanding sugar then place on a parchment lined baking sheet.

  • Bake on the middle rack for approximately 12 minutes.

  • Allow cookies to cool for a few minutes on the tray before transferring them to a wire rack or plate.

If you are using a Kitchenaid mixer be sure to use the paddle attachment for these.


I only have unsalted butter, is that OK?

  • Sure! Unsalted butter will work just fine - you may want to add some salt into the dough. About 1/4 tsp of salt can be added at the same time as the baking powder and baking soda.

Do I need to use parchment?

  • Nope. It is ok to use an ungreased cookie sheet, parchment makes for an easier clean up. Especially with using the sanding sugar which may stick to the cookie sheet.

Can I add icing to these?

  • Sure! Buttercream tastes great with these, you can use your favorite recipe.

I can’t find sanding sugar - how else can I decorate them?

  • If you have food or icing dye you can dye the dough red or pink and roll the dough in granulated sugar!
